New Week, New Menu.
I’m SOOOO far behind 🤣
This week we had a kid have all 4 wisdom teeth pulled at once, so the menu I put together was pretty basic for the beginning. There are three new recipes this week, I put a little star next to them. They all are fairly easy and quick, so I wasn’t too worried about doing so many new in a week.

Sunday ~ Grilled BBQ Chicken and Whipped Mashed Potatoes
This was pretty simple, The Boyfriend grilled chicken breast out in the non-stop snow (South Dakota 🤣) and I made the potatoes. I don’t have a recipe, but I will share some cool tricks to use while making the potatoes that makes for whipped, instead of tacky mush.
After the potatoes are boiled, I leave them in the strainer and let them steam off for a bit. I watched a Michelin chef in a video, who said that this allows the extra moisture to leave the potatoes, so they hold more of the cream and butter.
I use cream and just a little whole milk and real butter, NOT margarine AKA plastic. I know it’s more calories and definitely more expensive, but we’re all slowly dying anyway and I’d rather do it on the butter train… I season with salt, pepper and dry ranch seasoning.
He also said to warm up your cream and butter before you add it to the potatoes, apparently warm dairy absorbs better than cold requiring less stirring. Which leads me to the last trick, do NOT over mix or stir your potatoes. You will over work them, and they will be less fluff, and more glop.

Wednesday ~ Cheeseburger Pasta ⭐
Everyone loved this recipe so much, that I’m making again this week lol. We’re adding bacon (no Onions because children). I did change the amounts of protein, there is a little serving option you can change on the recipe site so you can plan your ingredients. I bumped it up to 8 servings, excluded the onions and used 2lbs of ground beef instead of 1. It turned out perfect and everyone loved it…I stole a couple bites even though I don’t eat Gluten, and ordered special pasta so I can make my own next week lol. I’m trying these, I haven’t tried these yet but they had decent ratings so I’ll let you know how these work with the recipe.

Thursday ~Monte Cristo Sliders ⭐
This was another fan favorite, I made two (three if you count my mini low carb bread thin batch lol) batches. One exactly like the recipe, and one for The boyfriend. He isn’t a fan of the dijon mustard, so I used regular. And he was okay using Pepper jack cheese because I forgot to order more Swiss, he’s a trooper! We used bought raspberry jam, I’m sure there are plenty of recipes out there for a better one but I wasn’t feeling that Martha Stewerty.
All three versions came out fantastic, and my super spicy neuro kid was in dancy food heaven.
Friday ~ Homemade Ramen⭐
Okay…SO this is the recipe I went off, but none of the children wanted meat or floaters so Basically, I made the broth. Also, I was out of ginger, so that was omitted, and I added Chicken Boullion seasoning. I didn’t have fresh mushrooms, but I did have a can of mushrooms, so I cooked them up in some butter and garlic for myself and I think they were just fine. This was my tooth procedure day so broth was probably best, but I will be making this again with ALL the fixins. The Broth was amazing so I imagine the whole recipe together, would be absolutely fantastic.
I could have soft pasta with the dental stuff, so I used the Palmini “noodles” for this and I actually really like these ones. They were even good warmed up the next day, which is the real test for weird foods.

Saturday ~ Lazy Lasagna and Garlic Bread
I really suck right now lol, with my child having teeth out and I had a dental procedure on Friday that took me by Suprise on diet and recovery…Plus just life in general so I’m a bit behind.
