“Cajun” Smoked Sausage and Rice
We made it White person spicy
This was definitely a favorite in our house, it was a quick meal for how rich the flavor was. It would be easy to add so many different things, to your preference and spice level.
I found this recipe off of Pinterest, from On My Kid’s Plate. It fed 4 of us with leftovers, I doubled the recipe thinking that everyone would eat it… but the two pickiest decided that it looked too funny to eat. 🤷♀️ Can’t win them all I suppose lol.


The only real change I made was on the rice, it called for long grain rice and I wanted to use the Mahatma yellow rice. It does have it’s own seasoning which I added to the pot, but I would watch the extra salt you add while seasoning. I also used smoked paprika, it just had a better Cajun flavor. It was not spicy enough for the Texan Boyfriend, so he added all that jazz to his own bowl, but he loved the flavor.

I ended up having to move the ingredients to the cast iron stock pot, it needs a pretty deep skilled or pot even without doubling it. SO just beware unless you want to do extra dishes lol.
It will be pretty soupy but will thicken up once the rice cooks, I left the lid on for the rice portion and just left it alone. The boyfriend did not trust my trust of the rice not sticking, so it did get stir or two. The biggest thing is letting the rice cook long enough, it may have not taken as long had the lid stayed on but it was still crunchy at the 23 minute mark so I cooked it about 5-9 minutes more.
