A couple new, a couple old.
This week I picked some fan favorites, and also a couple new recipes to try that sounded simple. As always, the original recipes and creators are linked in the titles. The stars show the new recipes we’re trying.
Sunday ~ Creamy Chicken Tortilla Soup⭐
I ended up not reading ahead on this recipe, and didn’t realize it wasn’t a crockpot recipe. My chicken I planned on using was frozen, and I didn’t want to fuss with thawing it, So I sautéed everything in my crockpot (If you can get a crockpot that has this option, it’s so great to only have one “pan” to deal with.). I left out all the cream-based ingredients and it’s currently cooking away on low in the crockpot, when the chicken is cooked, I’ll add the rest of the ingredients and let you know how it turned out.

Monday ~ Mom’s Homemade Lasagna
I don’t actually have a recipe for this, it’s my own recipe from many years ago that I just kind of add things until it tastes “right.” My plan is to try to write it down as I go this week and share but most of it is going to be seasonings to your preference because I don’t even measure.
This is NOT the type of cook I am… this is the ONLY dish that I just add things lol. I am a baker by nature, and everything must be measured exactly then I make The Boyfriend taste test and add what’s missing.
The “Gravy” or pasta sauce for this, was something taught to me from a dear Italian friend who I met when I lived in Germany as a young 19-year-old. She caught me buying Prego, made me put it back and we went from the commissary to her home for a lesson in Gravy. I decided to use this sauce in a lasagna but didn’t like the ricotta mixure and decided to add cream cheese withi the ricotta, and Mom’s Lasagna was born. If I was doing it correctly, I’d start the sauce tonight and let it simmer until tomorrow…. but I’m not sure that’s going to happen this time.
I’m kind of in my Lazy Mom Era 🤷♀️
Tuesday ~ Big Mac Sliders⭐
I feel like we have some sort of slider meal every week lol, for some reason kids will eat tiny food even if it’s something new. My youngest is obsessed with Big Macs, so I found this one for him.
Wednesday ~ Pancake Night
Breakfast night is also a normal occurrence in this house, we have a lot of pancake and breakfast items to use up and The Boyfriend cooks on these nights. So it’s a win, and who doesn’t love breakfast foods?!
Thursday ~ Spaghetti and Meatballs
I’m making a large batch of the homemade sauce on Lasagna night, and we’re going to use it for spaghetti night. The Boyfriend will church/spice it up, but personally I think it will be perfect as is lol. This is probably the MOST confident I am about any of my own recipes.
Friday ~ Picnic Potatoes
I don’t know if this is actually what this is called, but I had it in a restaurant and was hooked. I called them Picnic Potatoes because they have all the fixins from a picnic/BBQ… Baked Potatoes fancy cooked, meaning I baked, oiled and salted them instead of microwaving them. Then they’re topped with butter, sour cream, shredded cheddar, pulled pork, baked beans and coleslaw.

Saturday ~ Homemade Ramen
This isn’t a new recipe, but last time I only made the broth and this time I’m making it with all the Yum from the original recipe. Go check it out, because the broth was amazing, I know the full recipe is going to be amazing.
